Hawaiian Banana Nut Bread - This was one of the moistest, most delicious banana breads I have EVER made... and I have made A LOT. I did add extra banana (almost double what was asked) and tossed in 1/2 cup shredded coconut and found that I had to bake it much longer than recommended. I also tried a second version with chocolate chips (1 cup) and cream cheese (3/4 cup) instead of the pineapple and nuts and it was divine! Next time I would use less oil - it was a little greasy for my liking.
