Dinner prep happening now. Add to your crock pot (except the coconut milk!) and cook on low for 4-6 hours, or on the stove top, covered, over medium-low heat until potatoes are soft. Once everything is cooked, purée with immersion blender or traditional blender and add in coconut milk. Adjust salt and pepper to taste! Thank you to @paleoleap for awesome recipes!
