This blows my mind! Microwave Minute Muffin. Mix 1/4 cup quick oats, 1 egg, handful of blueberries, sprinkle of brown sugar, and 1 tbsp soy or almond milk in a mug, and microwave for 1 min (+30 sec if not firm).
