Spinach & cheese crepe "purses." ~10-12 crepes (made without sugar), Filling: 10 oz (300g) frozen spinach,  1 lb ricotta cheese, 1c each parmesan & Gruyere, 2 eggs, ⅓c  35% cream, pepper & nutmeg~ thin chive sprigs (to tie).  Squeeze spinach through a sieve & chop fine. Add cheeses.  Stir in eggs, then cream. Season generously with pepper & sprinkle with nutmeg. Place filling in centre of crepes (do not over fill). Tie chives (double knot).  Bake 350°F oven 30 mins. to melt cheeses.
