Gordon Ramsays chocolate soufflé. Halved the recipe. Only had 60% cocoa - 70% (or darker) would definitely better, and I'd probably halve the sugar as well. Learned new vocabulary while making this! Oh, and rather than coating the ramekins with shaved chocolate, I used sugar.
