Baked pumpkin pie oatmeal. This was delicious and easy to make! I had to bake it 20 minutes longer than it said though, because the middle was still mushy.

Coconut French Toast.   1 large egg  ¾ cup of coconut milk  1 tablespoon sugar  ½ teaspoon vanilla  6 slices of stale baguette  Sweetened shredded coconut  Chopped almonds  1 teaspoon butter  Maple syrup, sugar, jam (or other flavor)  fresh fruit

Overnight Crockpot Oatmeal: 1 cup steel cut or regular oats (NOT Quick Oats!). 4 cups water. 1/2 cup milk. 1/4 cup brown sugar (or stevia and some molasses). 1 TBS butter (or coconut oil). 1/2 tsp vanilla extract. 1 tsp cinnamon. Dash or two salt. Combine all in crockpot and cook on low for 8hrs. Serve with milk & cinnamon sugar.
