Shredded kale, Brussels sprouts and cabbage salad with warm bacon vinaigrette. Seriously delicious. Cook 4 strips of bacon, remove the bacon to a paper towel. Drain all but 3 tablespoons of bacon grease. Add 2 chopped shallots and fry til crisp and golden. Whisk in 1/3 cup apple cider vinegar, 2 tablespoons of brown sugar, 2 tablespoons of Dijon mustard, salt and pepper. Toss shredded veggies in the pan with hot dressing, top with crumbled bacon. Add salt and pepper to taste. Delicious!!!
