Alex Rios on Instagram: "Pickled Red Onions 🧅🔥 recipe ⬇️ 2 red onions or 1 big red onion, sliced 2 cups water 2 cups any vinegar 1/3 cup sugar 2 tbsp salt 4 garlic cloves 2 bay leaves 2 tsp peppercorns Cut top and bottom off onion and slice from root to end. Separate into two 16 oz mason jars along with peppercorns and garlic cloves. Boil water, vinegar, sugar & salt. Whisk until everything is dissolved. This is how you make them: * 1 lb medium carrots (sliced into ½ inch rounds) * 1 tablespoon olive oil * ½ teaspoon EACH: garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper * ¾ cup finely grated parmesan cheese (divided) * 1 tablespoon hot honey (optional, but highly recommended) Mix the carrots with the oil, spices, and ¼ cup of the parmesan cheese. Sprinkle the rest of the parmesan on a parchment paper lined baking sheet and then arrange the carrots on top. Bake for 20-25 minutes at 425 degrees Fahrenheit. The key is to never overcrowd the roasting tray and to make sure the veg are sliced quite thin on all the right places so they can get nice and crispy in all the right places. Also don’t be shy with the olive oil, salt and vinegar. As always, try best to cook intuitively and not get stuck too much on specific quantities. Just let it flow and roast! If you wash your sprouts, either do it well in advance so there is time to air dry / use salad spinner / pat dry - Brussels sprouts benefit when they’re fully coated/saturated with oil before roasting, especially the inner-side. Using a mixing bowl helps with even coating. Big time! - CONVECTION bake if you have it! Air Frying is a fancy word for convection cooking - cooking with hot circulating air.
