Couscous Royale (Couscous with Grilled Meats)_ A plate of fluffy couscous is lavished with meatballs, lamb chops, chicken skewers, merguez sausage, and a saffron-scented chickpea stew in this celebratory dish, a staple at Moroccan restaurants in Paris. This recipe first appeared in our November 2012 issue along with Jay Cheshes's story Couscous Royale.
30 min Cassoulet from Jacques Pépin Notes: Either cut down on amount of meat or increase beans and broth - balance was off as is. No salt needed in recipe, the Ham will salt it enough on its own. Very good flavor in a short amount of time.
