“Baba au rhum” is one of the most loved cakes in France. Many lay claim to its origins, but it was indeed in Paris that it became the rum baba we know and love today. For an alcohol-free version (also called savarin), simply replace the rum with vanilla or rum essence in the syrup. 

📍to make 12x babas, you’ll need…
7g dried yeast 
½ cup (125ml) warm milk 
½ tbsp sugar 
2-3 tbsp honey 
3.5 cups (420g) plain flour 
½ tsp salt 
170g butter, softened 
4 eggs 
1.5 cups (335g) sugar 
1 cup (250ml) water 
¾ cup (185ml) dark rum 
2 tbsp apricot jam 
1 cup (250ml) cream, whipped
