chicken and rice in a blue pan with lemon wedges

Recipe video above. The best chicken and rice recipe in the world!! This is not an authentic Greek dish (as far as I know!) but it is made using classic Greek ingredients. The beauty of this is that it is all made in one pot / pan. Cooking the rice with the chicken on top adds extra flavour to the rice because the chicken juices get soaked up by the rice. MARINATING TIME: 20 minutes to overnight. {Recipe video above} SCALE RECIPE using servings slider - hover mouse over Servings.

chicken and rice in a white casserole dish with a fork on the side

Recipe VIDEO above. Made entirely in the oven (no stove!), the rice in this recipe is outrageously delicious! It's buttery and garlicky, tender but not mushy. The secret tip is to briefly bake onion with garlic and butter before adding the rice, liquids and chicken - it adds a great flavour base!

a bowl filled with meat and vegetables next to chopsticks on top of a table

Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON'T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!

a large pot filled with broccoli and other food on top of a table

Recipe video above. This Golden Coconut Chicken Curry blows me away every time I make it - and I've been making it a lot lately! Such a beautiful spice blend, Thai vibes with a whisper of Indian, like a less shrimpy version of Thai Yellow Curry with a hint of Massaman. Don't skip the star anise and cinnamon stick, and really try to use fresh turmeric rather than dried, for max flavour and yellow colour. All credit to JB for this one, his invention. :)*UPDATE: If you skip fresh turmeric and…

spaghetti with meatballs and parmesan cheese in a black bowl on a marble table

Recipe video above. These are my idea of "perfect" meatballs. I make them extra soft and juicy by using bread instead of breadcrumbs, and the grated onion is my secret tip for adding extra flavour into this. Plus, no need to sauté diced onion before mixing it in! Served with a rich tomato sauce made extra tasty by cooking it in the same pan that the meatballs are browned in.

a pot filled with pasta and meat sauce

Recipe video above. This is a beefy pasta cooked with Italian seasonings in a creamy tomato sauce. Epitome of homemade comfort food with the convenience of one-pot cooking! Love how the pasta absorbs the flavour of the sauce. For more, see the full One Pot Pasta recipe collection.

a roasting pan filled with meat and vegetables

Recipe video above. Fall-apart succulent lamb smothered in a rich massaman curry sauce with melt-in-your-mouth potatoes that will take you 5 minutes to prepare. This larger-format version of Lamb Shanks Massaman Curry is made for groups: make up to 4 shoulders at once (serves 25 - 30!), reheats 110% perfectly (unlike lamb leg!), it looks impressive and a crowd pleaser. Plus it's kid friendly because Massaman Curry isn't spicy!

a skillet filled with noodles and meat

Recipe video above. The beef mince version of everybody's favourite Chicken Chow Mein - great way to cook up ground beef with noodles. Economical and no meat chopping required, with plenty of hidden vegetables so it's a complete dinner! Scrambling up an egg with the beef is a neat trick to make the beef cling to the noodles better.

a bowl filled with rice, meat and cucumbers next to chopsticks

Recipe video above. A very quick, very tasty way to use up leftover cooked beef used in things like broth (see notes to start from raw). Created to use up leftover brisket from making Vietnamese Pho. Cooked is tossed in a Vietnamese lemongrass marinade then pan fried until golden. It's INSANELY delicious!

a skillet filled with chili, cheese and tortillas

Recipe video above. A bubbly casserole of sorts, this Mexican beef and bean is like a baked version of chilli con carne with lots of melty cheese - but faster to make. Think of it like your ultimate all-purpose Mexican beef - stuff in tacos, DIY burrito wraps, dunk with corn chips - like nachos!
