Lemon-Coconut Bars. I overcooked these and they STILL taste amazing. Quite a bit of prep work, but worth it. And the coconut crust would make a fantastic pie crust for a meringue pie too.

Colette's Buko Pie | Fast forward to minute 5:09 to see the baker put 4 hefty handfuls of young coconut meat. OHHH YEAH! I also notice that they first add the buko then on top pour the cream filling. Most other recipes I've seen ask you to add the coconut to the pie filling and cook it. I love Colette's so I'm trying their method.
