35min · 8 servings Ingredients + instructions: • -500g mushrooms • FINELY chop • -1 onion • -2 cloves garlic • FINELY chop • -1/2 cup (65g) ground walnuts • -a handful fresh parsley • FRY until the mushrooms have lost all their water • -1 Tbsp tomato paste • -1 Tsp each salt, cumin, smoked paprika, ground coriander • -1/2 Tsp cayenne pepper, cinnamon • -2 Tbsp corn starch • -4 Tbsp chickpea flour • STIR it in/FREEZE for 10mins to let it cool down • -2-3 pitas/flatbreads • FILL and FRY or grill until golden brown • -1/2 cup (125g) vegan yogurt • -1 Tbsp each lemon juice and agave • -salt and pepper to taste • -1 Tsp garlic powder • MIX

40min · 3 servings Recipe: • RECIPE (3 servings, 40min prep time): • -600g potatoes • Cook in boiling water for 5-7mins. • Then cut in half. • Parmesan mixture: • -4 Tbsp nutritional yeast • -2 Tbsp corn starch • -7 Tbsp oil • -5 Tbsp vinegar • -salt and pepper to taste • -optionally: thyme, paprika and garlic powder • Mix it and spread it in a lightly oiled baking dish. • Place the potatoes upside down in the dish. • Bake at 230C/445F for 20-30mins until crispy. (I also added some vegan cashew Parmesan on top).
